Cooking up a storm!

Our groups have been busy cooking up a storm over the last few months in our community cooking classes!

The main remit for our classes was that all meals have to be cheap, easy to prepare, healthy and nutritious and of course tasty!

Classes have been very popular - highlights have been our smoked paprika quesadillas made with sweet potatoes & cheese. These are quick and easy to make and ingredients can be adapted with whatever you have in the fridge.

Our aubergine and red lentil curry was also a big hit - and we managed to make enough to feed a very busy group of Wellness Wednesday dancers!

And everyone was pleasantly surprised at how tasty and easy the pea and mint soup was! This is a regular on our Wellness Wednesday menu & much requested along with the Carrot & Coriander soup.

And there’s more to come! More veggie curry’s with simple rice-cooker rice & kachumber salad, and a Ottolenghi inspired couscous salad now that the Spring weather is here!
